Remember when you were a kid, and your mother would keep a bunch of brown, not-so-attractive bananas in the freezer? And then one day she would take them out to defrost... and you'd think, "gross." But then she'd magically turn  them into one of the most delicious things on this planet? Banana bread!

Well, you no longer have to reminisce about that, because I've come up with a quick and easy way to have your banana bread and eat it too. Even if you're gluten-free!

Happy-Inner-Child Banana Bread:

3 large bananas, ripe 

1/2 cup sugar

2 eggs

1 tsp vanilla

4 tbsp oil or melted butter

2 1/2 cups of GF bake mix (I use Bob's Red Mill GF Pancake Mix or Wegmans GF All Purpose)

1/2 cup chocolate chips (optional)

Preheat oven to 375. Grease a loaf pan and set aside. In a large bowl, mash the bananas down with a fork or potato masher. Add sugar, eggs, vanilla and butter and stir until well combined. Add flour mix and stir some more. Fold in chocolate chips. 

Bake 35-40 minutes. Like with all GF baking, it's important to keep an eye out the first time you bake this at home, as different ovens yield different results. I would go ahead and stick a knife into the center at the 30 minute mark. If it comes out clean, it's done. If not, keep baking. Check again at 40 minutes, you know the drill. 

Try to wait until it cools before you dig in... but if you can't, it's okay... Enjoy!!
