Read to Succeed Buffalo Earns Commitment of $495k from Oishei Foundation

The John R. Oishei Foundation announced Monday that it is awarding a three-year funding commitment to Read to Succeed Buffalo’s (RTSB) early childhood literacy programs. The three-year commitment totals $495,000.

“A main target of our investments is to decrease poverty and help individuals to become self-sufficient,” said Robert D. Gioia, president of The John R. Oishei Foundation. “Research proves, and common sense dictates, the most effective investment we can make as a community is in high quality early childhood education. What we have recently learned however, is we need to continue early learning supports right through age eight if we want our low-income students to succeed. RTSB is one of the few programs in our community that is building a continuum of high quality literacy supports for children from birth right through third grade.”

Let's Go Vegan: Puerto Rican Rice & Beans

As I sat down to dinner with my parents the other day, I looked down at my plate of rice and beans, tostones and a pork chop and thought, "hmm, this would make a delicious vegan meal... without the pork chop, of course".  

Now traditionally, Puerto Rican beans are decidedly not vegan, as they are made with lard. However, just substitute the lard for some veggie oil and you're good to go. Not to mention it's way healthier for ya. I deviated from the norm even further by adding extra veggies, like carrots, spinach, or even peas, if you feel like it. Like all my recipes, feel free to make it your own. Let me know what you did different! 

About the rice. Any rice you prefer will do. My favorite is Jasmine rice. Again, not the traditional Puerto Rican choice, but its aromatic long grains just make me so happy... Either way, rice is very easy to make, just follow the directions on the package. And the beans:

The Buffalo Zoo will hold a Family Valentine’s Day event this weekend, as part of the Zooper Saturdays series.

Spend some quality time together at our Family Valentine’s Day event! Enjoy animal demonstrations and enrichment activities. You can even make a Valentine card for a family member, friend, or your favorite Zoo animal! The event runs from 11:00 a.m. until 3:00 p.m. on Saturday, February 2. Molten Chocolate Cake In 2 Minutes Flat!

So I'd heard about "mug" cakes before, but whenever I'd tried one of the recipes, the result was a rubbery, tasteless mess. That's when I decided to take matters into my own hands. With a few adjustments, and the addition of a super easy chocolate sauce, this treat went from a regular old "mug" cake, to a crazy delicious and decadent dessert. All in about two minutes!

The best part about this, is that you can easily make it gluten-free by using a good GF bake mix (I tried it with Wegman's All Purpose and it was AWESOME). No need to change any measurements. Also, feel free to drop a dollop of peanut butter, or even one of those mini candy bars in the middle for an extra surprise. Go crazy! Who says you can't have your cake and eat it too?

 

Molten Chocolate Cake in 2 Minutes:

1 microwave-safe coffee mug

1/4  cup sugar

1/4  cup flour (whether GF or regular)

2  tbsp cocoa powder

Dog Ears Bookstore to Host Four Book-signing Events

Dog Ears Bookstore, located at 688 Abbott Road in South Buffalo, has scheduled four book-signing events during the month of February.

On Sunday, Feb. 3, Dog Ears will host a book-signing with local financial planner Amy Jo Lauber, author of “Living Inspired and Financially Empowered: Aligning Our Spiritual and Material Lives,” from 1 to 2:30 p.m. 

At 11 a.m. Sunday, Feb. 10, visitors have an opportunity to meet Nicholas and Zoie Kin, authors of “How to Make a Butterfly From Scratch.”  Also on hand will be the book’s illustrator, Jessica Saddleson.
