National Grid's Commitment to Reenergize Gill Creek Park Comes Into Full Bloom

Niagara Falls Park receives another installment of $125,000 extreme makeover

In what has become something of a rite of spring, more than 50 National Grid employees returned to Gill Creek Park in Niagara Falls to continue efforts to beautify and transform this popular public park and community asset into one of Niagara County’s most picturesque and useful green spaces.  This is the fourth time in five years that National Grid volunteers have worked with city and neighbor organizations on projects in the park.

South Buffalo Alive to Present Parade of Circles on June 2

 

The Parade of Circles, an annual event celebrating beautification projects along historic McKinley Parkway in South Buffalo, will take place at 2:30 p.m. Sunday, June 2. The event is presented by South Buffalo Alive, a nonprofit community organization dedicated to improving the quality of life in South Buffalo through ongoing preservation and beautification efforts.

Established in June 2001, the parade runs from Dorrance Circle to Heacock Park and is followed by a picnic in the park with plenty of activities for the kids. The parade will feature music and dancing as well as community groups that help make the neighborhood a special place in which to live.

Elmwood-Bidwell Farmers Market Plans May 11 Opening

Western New York’s most popular open-air market, the Elmwood-Bidwell Farmers Market, will return for the 2013 season on May 11. The market will be open from 8 a.m. to 1 p.m. Saturdays, rain or shine, through Dec. 21.

Visitors to the market will discover a few new surprises this year, including several new vendors. Joining the market for the 2013 season are Blackbird Sweets, Bieter and Sons Farm, Plato Dale Farm, T-Meadow Farm and Eveningside Vineyards. Several Western New York wineries will also continue to provide tastings on a rotating basis.

Something New and Delicious: Argentinian Flat Bread

Faina (pronounced "fah-ee-NAH") is a yummy flat bread made of chickpea flour. It's commonly eaten in South American countries like Argentina and Uruguay, but I've traced its origins to Italy somehow... I don't know, I'm not a food historian. What I am is someone who loves trying new exciting foods, and if they also happen to be good for you, then it's bonus time! 

Faina is really easy to make. It's made from chickpea (garbanzo bean) flour, so it's a low carb, high fiber, heart healthy, and really tasty alternative to your regular pizza crust or cracker. Is it vegan? Easily. Is it gluten-free? You betcha. Is it absolutely delectable? Of course! I wouldn't share it with you if it wasn't.

Italian Sausage Deliciousness: Who Says Healthy Can't Be Yummy?

Just because something is healthy, it doesn't mean it can't also be rich and satisfying. Case in point: today's recipe. 

Who doesn't love some sausage and peppers in a zesty tomato sauce? A big bowl of it, with crusty garlic bread... Mmm, I'm in heaven. But who needs all that fat, right? I certainly don't. Which is why I have made this classically luscious dish into a heart-healthy, you-don't-need-to-go-running-tomorrow, it's-ok-to-eat-some-more mound of comforting deliciousness. Not to mention, it's really easy to make... 

April Showers Bring Italian Sausage and Pepper Stew:

1 (14 oz) can of diced tomatoes. Fresh tomatoes will do too, just chop 'em up. 

1/2 bag of frozen peppers and onions mix. Again, if you got fresh ones, dice away, but I find this easier. 

2-3 cloves of garlic, diced or grated

1 lb of Hot Italian Poultry Sausage. Chicken or turkey will do.

A few handfuls of baby spinach
