Who doesn't love some sausage and peppers in a zesty tomato sauce? A big bowl of it, with crusty garlic bread... Mmm, I'm in heaven. But who needs all that fat, right? I certainly don't. Which is why I have made this classically luscious dish into a heart-healthy, you-don't-need-to-go-running-tomorrow, it's-ok-to-eat-some-more mound of comforting deliciousness. April Showers Bring Italian Sausage and Pepper Stew:
1 (14 oz) can of diced tomatoes. Fresh tomatoes will do too, just chop 'em up.

2-3 cloves of garlic, diced or grated
1 lb of Hot Italian Poultry Sausage. Chicken or turkey will do.
A few handfuls of baby spinach
